Having finished our diving course, we've moved up to Trinity Beach and are making occasional excursions amidst much relaxation. Our first excursion was to three coffee growing establishments, starting with Tichum Creek. Tichum Creek had the least to see -- two trees, a rough shop and a roaster -- but was notably free with a friendly proprietor that was happy to tour what little was on display chatting up about how coffee could be held for up to two years in its green state and a couple of weeks after roasting before going stale. (Remember those numbers, they'll be amusing in a moment.) He also had a German coffee roasting machine that he'd bought and had rebuilt in Oklahoma City.
